A Guilt-Free Thanksgiving Snack or Dessert: Dr. Belanger's Low-Carb Peanut Balls

Thanksgiving is just around the corner. That means lots and lots to eat and possibly topped off with a few sweet treats. It can be a challenge to stick to a healthy diet during the holiday season, especially if you're on a diet to lose weight. Desserts are usually where people get into trouble. However, that doesn't have to be the case. Not when there are low-carb peanut balls on the menu. Dr. Julia Belanger's low-carb peanut balls make for the perfect snack, but they can also make for a nice after-dinner treat. It has just the right amount of sweetness to satisfy your dessert craving. Plus, you'll get an extra boost of protein. They are so easy to make. The hardest part is waiting for them to chill if you don't want to eat them at room temperature. These low-carb peanut balls are high in protein and healthy fats, so they will keep you feeling full for longer. Even though these peanut balls are made with healthy fats, you'll still want to limit yourself to just a few. These peanut balls are great if you're on the go or traveling and don't have time to have a full meal. Just pack a few in your bag, and you're good to go. Who knew eating low carb could be so good and satisfying?

Dr. Belanger's Low-Carb Peanut Balls

Ingredients 4 ½ tbsp unsweetened desiccated coconut 1 tbsp dry unsweetened cocoa powder 3 tbsp finely ground raw almonds 1 tbsp erythritol 1/4 tsp sea salt 3 tbsp unsalted, unsweetened organic peanut butter Directions

  1. Add cocoa powder, coconut, almonds, erythritol, and salt to a mixing bowl and mix well.
  2. Add peanut butter. Mix well.
  3. Form 3/4 inch balls by rolling dough in your hands. Add up to 1 tablespoon of water if needed to soften mixture in order to roll.
  4. Coat outside of each ball with coconut flakes.
  5. Store in fridge or freezer. Enjoy!
